The Perfect Pan for Your Kitchen
Every couple of years, I go through my kitchen cabinets and do a massive purge of my cookie pans. Between getting beat up, bent, dinged, darkened or even rusted, I like to replace them and start anew. All the better for a perfectly baked cookie, in my opinion.
If you’re on the prowl for a new cookie pan yourself, you might be interested in this list from the folks at Better Homes & Gardens. I have one of those baking pans with air in the middle, which I think is great for baking cookies–the bottoms don’t brown out before the rest of the cookie is done, given them a more homogeneous texture.
However, I still covet a real baking sheet, sturdy, with raised sides. Like the ones they use in restaurants. And the first choice on this list. Too bad I just don’t have the storage space–I almost bought one a few weeks ago, but for that.
