Pizza Screens
About a month ago I started going to Index Restaurant Supply in the River Market area of Kansas City. Its a block West of Planters and a block North of the Farmer’s Market for those familiar with downtown Kansas City. Cool place and they have everything you’d find in a restaurant. Open to the public. Cool stuff for the home kitchen. Its restaurant quality equipment which doesn’t equate to high end, but often means specialty equipment you’d only find in a restaurant kitchen.
My recent find was a set of pizza screens for when I make pizza on my gas grill or oven. I like to use a pizza stone, but the stone is really meant to stay in the oven and is preheated prior to placing the pizza on the stone. With the screens, I can leave the pizza stone on the grill and put the pizza on the screen. Getting the uncooked pizza onto the stone was a hassle. Not anymore. I also grabbed a deep dish pizza pan.
