Good article. I always have a little chuckle when I see things like red beans &#38; rice or neck bones &#38; rice on the menu of trendy high-brow restaurants, where they charge more for one plate than it costs to make the whole pot.  I've always wanted to ask something like "can I get some jowl or collards to go with that??"</description>
